Lately I have been searching online for healthy alternatives to best-loved recipes. I found several recipes for stuffed bell peppers and modified to suit our healthy choices lifestyle. Here is that recipe:

"Stuffed Red Peppers - A Healthy Alternative"Ingredients (serves 6):

6 red bell peppers, topped and cleaned.

1/2 lb ground turkey

1/2 lb sausage (I buy Roman Brand without fennel and remove from casing)

1 large yellow onion chopped

1 lb mushrooms sliced

3 cloves garlic chopped

1-2 tablespoons butter

1 – 16 oz. can tomato sauce

1 – 16 oz diced petite cut tomatoes

1 teaspoon Italian seasoning

garlic salt and pepper to taste

2 cups brown rice – cooked

Directions

Preheat oven to 350 degrees.

Cut tops off red peppers. Remove veins and seeds from inside.

Brown meat. Remove from pan. Crumble by hand.

Brown mushrooms, onion and garlic in the same pan as meat was browned.

Add meat back to pan.  Stir in tomato sauce and diced tomatoes.  Add seasonings.

Cook over medium heat for 7-10 minutes

Add cooked rice to meat and sauce mixture.

Stuff peppers with mixture.

bake 1 hour. Sprinkle with grated parmesan or Locatelli Romano cheese.

SERVE.

Serving size: 1 pepper per person.
