How-to Make Mediterranean Tuna Salad

You will need the following to make your Mediterranean Tuna Salad as shown in the video:

4 teaspoons red wine vinegar
1 loaf focaccio bread
2 (6-ounce) cans low-sodium tuna in water, drained
1 jar (or can) roughly chopped artichoke hearts (approx 11 oz.)
1/4 cup sliced black olives (Kalamata)
1/4 cup finely chopped red onion
chopped flat leaf parsley
1-2 cloves minced garlic
fresh oregano
salt and pepper to taste
1/4 cup (or less) extra virgin olive oil
1 lemon cut in half

Other variation (add the following to the above recipe):
2 tablespoons low-fat mayonnaise
2 teaspoons capers
4 tablespoons crumbled feta cheese
2-3 Whole tomatoes cut in half and cored
 
For Tuna Wraps use romain lettuce leaves instead of the focaccio bread. For  a nice refreshing salad serve on a bed of romain or other leafy lettuce of your choosing or spoon into cored tomatoes for mediterranean tuna and tomatoe salad.
